Whole cardamom pods are used in savory Indian and Middle Eastern recipes. Cardamom is used in its ground form in both Middle Eastern and Scandinavian baked goods. Since cardamom loses flavor quickly once ground, it is often preferable to buy the long-storing whole pods and grind only the amount needed for a recipe. While cardamom is indigenous to India, today much of it is commercially grown in Central America. Our cardamom comes to us from Tamil Nadu in India, which produces the world’s best cardamom. Aside from Indian and Middle Eastern dishes, my favorite use of green cardamom pods is to make chai masala. Every morning.

Food52, one of my favorite food sites, has a number of recipes calling for cardamom. I have a favorite cake recipe from the site, and the pods I ordered were fresh, making access to getting to seeds quite easy. And of course, the cake was great!

I use these cardamom pods to make chai at home - and they are excellent quality. The ones I used to get at the local Indian store before this were small, shriveled, and much less fragrant than these ones. These are larger, plumper, and have a strong aroma and flavor - subsequently I don't need to use as many of them to get the desired amount of flavor in my chai. Keep them whole in an airtight jar away from light, and they should easily last 6-8 months!
Packaging (glass jar) is beautiful and the product is high quality. I've used this for multiple applications (masala chai, baking, etc.) and still have a lot left.
