I recently had friends over for dinner and made a chicken curry using a tin of Madras curry powder. I was embarrassed to realize that the dish was so bland that we were adding salt to the dish. I determined that my curry powder was umpteen years old! So I ordered about 6 or 7 whole seeds from a recipe in that same cookbook. Grind seeds as needed so the flavor is best. Make my own gluten free lebkuchen. This spice is a must include ingredient.
As one of few people who does not tolerate cinnamon, freshly ground cardamom is a good alternative. Different flavor but robust enough to substitute.
Normally this spice would get stale on my shelf, these seeds give me fresh ground cardamom when I need it, therefore I use it more often.
