Also called bitter oranges, Seville oranges do not have the same sharp citrus note that we associate with the oranges we eat. The dehydrated zest from these oranges is milder and more savory than our regular orange zest.
Their savory flavor makes them great for marinades and milder sauces. It is a traditional ingredient in some Scandinavian baking as well.
