Details

Lemon peel has two layers; the oily outer skin and the bitter, spongy pith beneath it. This zest is made from just the outer layer, so it has a wonderfully strong lemon flavor and fragrance with no bitterness. It adds a delicious lemon tang to salad dressings, marinades, or beverages. When using in baked goods, use one third of the amount of dried zest for the fresh amount called for. You may wish to soak the dried lemon zest in warm water for 15 minutes before adding to dry ingredients. Because of its high oil content, store this dried lemon zest in airtight glass or ceramic containers. Ingredients: Lemon peel.

Love it, when you are looking for something to cook, in the freezer and you find some fish or shrimp. You are putting a recipe together in your head. Then you remember you have one little dried-up lemon. Now you know you can nuke it for 15 seconds and you will get some juice, but you also know there is no way you will get usable zest. Then you remember you have a new spice that you have not tried. The lemon zest was the perfect thing to add. I will say I think it was better than fresh. And I did not have to zest it myself. Now I am looking forward to finding something to make using the lime zest.

The only place I buy my spices

Literally the best quality of spices. I've tried others but keep coming back. I especially like the peppercorn and course sea salt. I put them into my mills and have fresh salt and pepper everyday.
