Can I filter recipes for dietary needs or allergens?

Yes. Look for filters or tags for vegetarian, gluten-free, dairy-free, or other needs. If a filter is not available, check the ingredient list on each recipe and use suggested substitutions to adapt dishes.

What are easy ingredient substitutions if I am missing something?

Swap similar-texture items: yogurt for sour cream, canned tomatoes for fresh in cooked dishes, or vegetable broth for chicken broth. For proteins, use beans or tofu in place of meat. Adjust seasonings to taste after swapping.

How do I scale a recipe for more or fewer servings?

Multiply or divide all ingredient amounts by the same factor. Keep spice amounts slightly lower when scaling up and adjust to taste. Check cooking time for large pans and use a thermometer for proteins where possible.

What are basic spice pairings for each category?

Hi Janette,

Selecting peppercorn grind size comes down to application. The finer the grind size, the quicker the pepper’s flavor will incorporate into the dish.

If you’re seasoning a sauce or a soup, you’ll want a finer grind size of pepper so it doesn’t affect the texture. Since ground white pepper is used mainly in cream sauces, we offer it only in an extra fine grind size.

If you’re seasoning a steak, roast, or hamburger, a coarse grind size is suitable. The same is true for recipes that call for longer cooking times.

When in doubt, you can select our Coarse Grind Tellicherry pepper as a general-purpose grind size.
