Yield: 1 cup
Peel and deseed the cucumber and chop or grate into fine pieces. A cheese grater is helpful for this step.
Blend all ingredients until smooth.
This recipe gets better if it has time to sit and let flavors marry. Make this ahead of time and store in the fridge the night before. Stir before serving.
