Homemade Instant Cinnamon-Raisin Oatmeal

Homemade Instant Cinnamon-Raisin Oatmeal
I like oatmeal, but don't always have time to make it. I've tried commerically available instant oatmeal, but do not necessarily like the taste. So, I learned to make my own kind from fresh ingredients I have at home. It is fresh-tasting and much less dense and starchy than some of the commercially made instant oatmeal products.

Ingredients

  • 4 tablespoons "quick" oats
  • 1 tablespoon brown sugar ( for variety, try vanilla sugar)
  • 1 teaspoon raisins
  • dash of salt
  • 1-2 walnut pieces, broken, optional
  • 1/2 cup boiling water

Preparation Instructions:

In a plastic sandwich bag or zip-lock “snack” bag, combine all the dry ingredients

Seal each bag and store in a cool, dry place.

When ready to use, place the contents into a cereal bowl and add ½ cup boiling water. Let stand about a minute before it’s ready to eat.

More About This Recipe

Use fresh cinnamon to bring out the flavor, and try different kinds of cinnamon to vary the taste. The Chinese cinnamon is a good starting point, and Ceylon cinnamon is also fine. Saigon or Vietnamese cinnamon has a stronger taste, which I personally like. This can be a good recipe to prepare with children, since they can work as a team to measure the ingredients and assemble each portion. For vegan oatmeal, use beet sugar or evaporated cane sugar instead of brown sugar.

I make oatmeal with Old Fashioned Oats, a well mashed banana, walnut halves, raw pumpkin seeds, raisins and one of honey, maple syrup or cinnamon. Add a splash of milk (enough to keep texture wet).

In a bowl, I add the oats, then spread the mashed banana evenly over the oats. Using a fork I mix one of the honey, or maple syrup or cinnamon into the mashed banana. I add the walnuts, pumpkin seeds and raisins and milk. I mix well, let the bowl sit for a few moments, then microwave for two minutes. I let the bowl sit in the microwave for a few minutes to cool.

I will be trying this. I make a Chai Oatmeal with 1 bowl in the microwave.
1/2 c. quick oatmeal
1 c milk
raisins or any other dried fruit
Cinnamon to taste,
Ginger about 1/2 tsp.
Cardamon about 1/2 tsp
Add all together, in a microwave safe bowl. My microwave does it in 2 min. so check how fast your microwave works.
Once its done, I add about 1 tsp of brown sugar.
Enjoy!

I love this recipe! Instead of using boiling water I used 1% milk and Microwaved everything for 1 min! I also added just a little hint of butter! Nothing like waking up to a good bowl of Oatmeal on a bone chilling morning!
