Pilsen Hummus
Add a Mexican-inspired kick to standard hummus with Pilsen Seasoning from The Spice House.

Submitted by: Nancy Nash from Fox River Grove, IL

  • Use Pilsen Latino Seasoning and cumin to give classic hummus a Mexican-inspired smoky heat.
  • Process tahini with lemon first, add chickpeas in two batches, and use water or reserved aquafaba to reach a silky texture.
  • Store in the fridge up to 1 week or freeze for longer; serve with veggies, pita, or crackers.

Ingredients

Preparation Instructions:

In a food processor, combine tahini and lemon juice and process 1 minute. Scrape the sides and bottom of bowl and process a bit longer. Add oil and garlic, Pilsen spice, cumin and salt. Process for 30 seconds, scrape the bowl and then 30 seconds more of processing.

Add 1/2 of the chickpeas to the food processor and process for 1 minute. Scrape sides and add the remaining chickpeas. Process 1-2 minutes or until quite smooth.

Add 1-2 T water to thin out the hummus to your taste. Add additional salt or seasons if needed.
Serve with cut up vegetables, bread or crackers.

Frequently Asked Questions

What is Pilsen Latino Seasoning?

Pilsen Latino Seasoning is a Mexican-inspired spice blend that adds smoky, chili and savory notes. It brings a Latino flavor profile to dishes like hummus without needing many extra ingredients.

How spicy is this hummus and how can I adjust the heat?

With 2 teaspoons of Pilsen seasoning this hummus has a mild to moderate kick. To make it milder use 1/2 to 1 teaspoon. To make it hotter add more seasoning or a pinch of cayenne or chopped fresh chiles to taste.

Can I use dried chickpeas instead of canned?

Yes. Soak dried chickpeas 8 to 12 hours, then simmer 1 to 2 hours until very tender. Save some cooking liquid to use like the recipe water for extra creaminess. Use about 1.5 cups cooked chickpeas to match one 15-ounce can.

How do I make the hummus extra smooth and creamy?

Process the tahini with lemon first, then add oil and spices before the chickpeas. Add chickpeas in two batches and blend longer. Use a bit of aquafaba or warm cooking liquid instead of plain water. For peak smoothness, pinch off skins from a few chickpeas or use a high-speed blender.

Can I substitute tahini?

Yes. Sunflower seed butter or almond butter work for a similar texture and keep it nut- and sesame-flavored in different ways. Greek yogurt makes a creamy, tangy hummus but is not vegan. Expect flavor changes with any swap.

How long does the hummus keep and can I freeze it?

Store in an airtight container in the refrigerator for up to 1 week. You can freeze hummus for 2 to 3 months; thaw in the fridge overnight and stir well before serving. Texture may be slightly looser after freezing.

Is this hummus vegan and gluten-free?

Yes, the basic recipe is vegan and naturally gluten-free. Double-check your spice blend label to confirm there are no added non-vegan ingredients or gluten-containing fillers.

What are good ways to serve Spicy Pilsen Hummus?

Serve with raw vegetables, pita wedges, warm flatbread, or crackers. Use it as a spread for sandwiches, a dip for grilled meats, or a topping for roasted vegetables. Garnish with olive oil, chopped cilantro, or a sprinkle of extra Pilsen seasoning.
