Frequently Asked Questions
Can I use salted butter instead of unsalted?
Yes. You can use salted butter, but taste as you go and skip adding any extra salt. Unsalted butter gives you more control over seasoning.
How do I make it less spicy or hotter?
To reduce heat, cut the cayenne and Aleppo flakes. To make it hotter, add more cayenne or a pinch of crushed red pepper. Adjust in small steps and taste before chilling.
What can I use instead of honey?
Maple syrup, agave nectar, or a light corn syrup work as sweet swaps. For a vegan option, use a vegan butter and maple or agave instead of honey.
How should I store and freeze the butter?
Roll the mixed butter into a log in parchment or wax paper, seal tightly, and refrigerate up to one month. For longer storage, freeze wrapped logs up to three months. Thaw in the fridge before using.
What are the best ways to serve this butter?
Spread it on crackers or warm bread, drop a slice onto hot steak or roasted vegetables, or add to fried chicken and waffles. Slicing the chilled log makes neat portions that melt nicely on hot foods.
How can I get a smooth, well-emulsified butter?
Start with butter fully softened to room temperature. Mix thoroughly with a spatula or hand mixer until uniform. If ingredients are too cold they will not blend evenly.
Can I scale the recipe up or down?
Yes. Multiply or divide all ingredients equally to keep the same balance. When making larger batches, taste and adjust spices and honey as needed before chilling.
How long does the butter last at room temperature while serving?
Butter softens quickly at room temperature. For safety and quality, return it to the fridge within two hours. Keep small serving portions and replenish from the chilled log as needed.
