The elusive flavor of tarragon spice does not share the long history of use that most herbs do. It came into popularity in the 1600's in France.You will find it in many classic French sauces including: bearnaise, hollandaise, tartar and bechamel. It is a wonderful fish herb for sole, shrimp and even lake fish. Add tarragon spice to chicken, rabbit, veal, or to make an herbed butter.

Gone Gaga for Tarragon

Tarragon is one of those potentially non-essential spices I didn't know I needed — until I noticed it! I'm sure I was exposed to tarragon growing up. I've had salads and things like "Tuna Tarragon" and noted its delicious, complementary notes of greens, a slight sweetness and a savory, licorice-type top-note. I detected it when using my now-ubiquitous "Green Goddess" mix from Spice House and needed more! Now I flavor all sorts of things with tarragon directly, including Mediterranean dishes, chicken, fish, herbed-dressings and dips and especially tuna, chicken and turkey salads! I'm gaga for tarragon!

If you think it’s time to replace your tarragon it probably is!

I’ve been using an older jar of tarragon for my favorite (my own) salmon recipe and thought it tasted good. Until I bought a fresh pack from the spice house. Great taste and smells wonderful.
