Fennel pollen is hand collected from wild fennel which grows predominantly in Italy and now in California, thanks to Italian immigrants. Fennel pollen is a powerfully condensed spice with flavors of licorice, citrus and sweetness. Fennel pollen can be used in any dish you would add fennel seed or anise seed. It pairs well with grains, pastas, squash, pork, chicken and even icecream. This powerful spice should be used sparingly, as a little goes a long way.

We enjoyed a unique & delicious dessert at a nice restaurant, and wanted to duplicate it at home. That’s when we realized that fennel pollen is very difficult to find in our town. We were happy to find it at The Spice House and even happier to eat it sprinkled on vanilla ice cream, along with honey & olive oil!

Not an inexpensive herb but a little goes a long way with this herb and it really adds that something special to the finished dish. Use it at the end like a finishing salt and it is excellent!
