Ceylon cinnamon, or true cinnamon, is botanically different from cassia cinnamon. Ceylon has a more subtle flavor than its cassia cousins due to its lower volatile oil content. The people of Europe and Mexico prefer this cinnamon, which is often used for poaching spiced stone fruits, in pickling recipes, and for brewing hot cocoa. Ceylon cinnamon’s light and understated flavor makes it perfect for dishes that don’t have other flavors competing for the foreground. These quills are great in dishes like cinnamon ice cream, Dutch pears, custard, steamed puddings, stewed rhubarb, dessert syrups, and mixed into whipped cream.You can also use this cinnamon in savory dishes like Indian curries, aromatic rice, or braised pork shoulder. 1 weighted ounce is 3-4 whole sticks or about 1/4 cup of ground cinnamon. I've been looking for a good source of Ceylon cinnamon quills since Cinnamon Hill went out of business. Most of the Ceylon cinnamon quills available commercially are completely dead sawdust; at least these have a decent flavor to them, but still not nearly as bright and flavor packed as the best Ceylon cinnamon quills I've had.
