Curried Chicken Salad
A curry like no other
I was introduced to Vadouvan Curry via a recipe for Vegan Lentil Soup sent in a Spice House e-mail. (I de-veganized it by substituting chicken broth for the prescribed vegetable broth.) The soup makes a lovely entree, and the leftovers can be pressed into service with breakfast eggs or ladled on rice to accompany an Indian or Thai entree in a future dinner. Vadouvan has an almost flowery bouquet and a rich golden flavor.
