Since then, this Vadouvan Curry, a sweeter, shallot-based version of masala curry used in many Tamil lamb and shrimp dishes, has also delighted Parisian cafe-goers in curried chicken salad.

This is a French interpretation of an Indian Masala called vadavam, from southern India where French colonial influence is still felt. This vadouvan French masala curry has a rich savory flavor that is more familiar to Western palates than many Indian spice mixtures. Use this masala curry powder to make French-style curried chicken salad, as a marinade for shrimp or fish, or wherever you would use regular curry powder. Ingredient: Turmeric, coriander, cumin, spices, shallots, onion, garlic, cane sugar, curry leaves, kosher salt.

A curry like no other

I was introduced to Vadouvan Curry via a recipe for Vegan Lentil Soup sent in a Spice House e-mail. (I de-veganized it by substituting chicken broth for the prescribed vegetable broth.) The soup makes a lovely entree, and the leftovers can be pressed into service with breakfast eggs or ladled on rice to accompany an Indian or Thai entree in a future dinner. Vadouvan has an almost flowery bouquet and a rich golden flavor.

Good, not great

Was introduced to Vadouvan Curry in a Blue Apron box. This version of Vadouvan is OK, but I'm going to continue to look for another version.

Delicious!

Absolutely *incredible* when paired with eggs! Also excellent on chicken, fish, vegetables, potatoes, mixed in butter for toast, or sour cream for a dip; versatile. Savory and flavorful, not hot-spicy. Although it's marked as curry, the flavor doesn't make me think of traditional curries; the flavor makes me think of comfort foods.

Delightful Seasoning!

Milder and gentler than most curry powders, I use this in many dishes, some rather surprising. So far I have used it in cream of crab soup, mushroom soup, all manner of egg dishes from scrambles to egg salad, rice baked with vegetables and cheeses, all gratin dishes for that matter, and many fish dishes as well. My first taste was only months ago, but I am hooked! It will always have a place of prominence on my spice rack.
