
Nine-Spice Chili
This chile, literally translated as “yellow chile”, is a key ingredient for Peruvian classics like ceviche, Aji de Gallina and Huancaina sauce. It has a fruity, medium heat that pairs well with chicken, fruit, or rice. We also love it for pineapple or other fruit salsas, and to heat up cheese sauce and scrambled eggs. Ingredients: Aji Amarillo chiles.
