This chile, literally translated as “yellow chile”, is a key ingredient for Peruvian classics like ceviche, Aji de Gallina and Huancaina sauce. It has a fruity, medium heat that pairs well with chicken, fruit, or rice. We also love it for pineapple or other fruit salsas, and to heat up cheese sauce and scrambled eggs. This ground Ají Amarillo is delicious. Just the right balance of sweetness and heat, with a complex earthy flavor profile. The only thing that would make it better for me would be if it were organically grown.
Though it was a spicier Chile. Kind of mild , taste for our meats.
