This chile, literally translated as “yellow chile”, is a key ingredient for Peruvian classics like ceviche, Aji de Gallina and Huancaina sauce. It has a fruity, medium heat that pairs well with chicken, fruit, or rice. We also love it for pineapple or other fruit salsas, and to heat up cheese sauce and scrambled eggs.

The ground aji amarillo almost as good as fine chopped dried aji chiles…and a lot easier. I searched hi and lo and this is the best Aji amarillo I found. Essential for vegetable soup (peru style) with quinoa.. unique rich flavor and mild for a chile. A winter fav in our house. Thanks.

What a surprise!
I bought this out of curiosity since I've never had it before and what a surprise! A mildly spicy, fruity flavor makes this one of the most original tasing peppers I've ever had!

Good flavor and spice. Used it for picante de polllo for New Year’s Day. Spiced up the chicken without burning out our stomach—a good find. I would like to know which red chili is used as seasoning in Bolivia and southern Peru.
