Rosemary spice is used in abundance throughout European cuisines. But, it’s popularity for use with lamb and chicken have gained it a place in American cooking. This cracked rosemary comes from putting whole rosemary through a grinder to reduce the size to about 1/4 inch pieces. This makes them much more palatable for those who do not care for the barbs of the whole rosemary needles. Fresh grinding these needles makes a powder quite potent and well suited for sauces. It still has some texture but not indigestible

This cracked rosemary is very nice for marinades and long braised dishes. Like any dried herb, it has its drawbacks but the aroma is pungent and the flavor, particularly when rehydrated in a sauce, stew or soup, is second to none.

This is not a 1:1 substitute for fresh herbs. If you're going to use it in a fairly dry application, I would recommend getting the ground rosemary and, obviously, using much less than you would with fresh as drying concentrate the flavors. But if you are going to rub it on something or use it in something that will eventually be braised for a while, this is a great product.

Rosemary - gotta have it

Rosemary is one of my favorite spices. It doesn't grow very well in my back yard, so I need to supplement. This stuff smells wonderful. Several years ago on a business trip to San Diego, I walked by a hedge of rosemary bushes. Every time I make a return trip, I make a point to walk by and pull a sprig or three just to freshen the hotel room.

For the day to day, I use rosemary, with some other stuff, to doctor-up the store-bought Johnsonville sausage products in my morning sausage & egg sandwich.

Cracked Rosemary

Rosemary cracked needles are a great addition to potatoes ,mixed vegetables and ,of course pork. I bought this spice in a jar ,but should have bought it in a flatpack. It would have been so much easier to store
