This cracked rosemary is very nice for marinades and long braised dishes. Like any dried herb, it has its drawbacks but the aroma is pungent and the flavor, particularly when rehydrated in a sauce, stew or soup, is second to none.
This is not a 1:1 substitute for fresh herbs. If you're going to use it in a fairly dry application, I would recommend getting the ground rosemary and, obviously, using much less than you would with fresh as drying concentrate the flavors. But if you are going to rub it on something or use it in something that will eventually be braised for a while, this is a great product.
