Rosemary spice is used in abundance throughout European cuisines. But, it’s popularity for use with lamb and chicken have gained it a place in American cooking. This cracked rosemary comes from putting whole rosemary through a grinder to reduce the size to about 1/4 inch pieces. This makes them much more palatable for those who do not care for the barbs of the whole rosemary needles. Fresh grinding these needles makes a powder quite potent and well suited for sauces. We like using the cracked rosemary in our cooking because first, we love rosemary in a lot of dishes and when using dried,, the cracked gives a better savor to the food.

I’m in love with rosemary and during the winter months this reminds me of the rosemary I have in my garden beds. I use it in everything from roasted potatoes to my artisan rosemary bread we eat with Italian foods. I also make rosemary shortbread cookies that my husband devoures!
