Rosemary spice is used in abundance throughout European cuisines. But, it’s popularity for use with lamb and chicken have gained it a place in American cooking. This cracked rosemary comes from putting whole rosemary through a grinder to reduce the size to about 1/4 inch pieces. This makes them much more palatable for those who do not care for the barbs of the whole rosemary needles. Fresh grinding these needles makes a powder quite potent and well suited for sauces.
