Nine pounds of top-grade fresh California garlic is required to make one pound of dehydrated garlic. This granulated garlic powder keeps for an extended amount of time and its flavor is just like fresh, meaning this product is easy to substitute for garlic cloves. 1/8 teaspoon of granulated garlic is equal to one medium-sized garlic clove, and a 1/2 tablespoon is about equal to one whole bulb. The flavor in dehydrated garlic is released by coming into contact with a liquid. If no liquid is involved in your recipe (for example, when sprinkling some garlic on a salad in lieu of dressing), cover the amount of garlic needed with water and let soak for about 15 minutes and then use as planned..
