Trinidad Lemon Garlic Blend

In Trinidad, a 'callaloo' is a delicious dish made by blending a variety of ingredients. A Trinidadian man came into our shop once claiming that his mother made the very best fried chicken on the entire island. So we mixed up Trinidad Spice blend--a gingery-garlicky-lemony-with-a-hint-of-clove blend--on the spot from the ingredients he remembered.

This simple, yet classic seasoning is good for fried fish, grilled chicken wings, steaks or hamburgers or salads.For the marinade, mix about 1 tablespoon spice with 1/2 cup oil and 1/2 cup vinegar. Pour it over a whole chicken and marinate it overnight before cooking. Try substituting various liquids and oils to provide interesting variety! To use as a dry rub seasoning, just sprinkle on 1 teaspoon per pound of meat before grilling.Hand mixed from: coarse Kosher flake salt, powdered California lemon peel, granulated garlic powder, ground Zanzibar cloves, powdered ginger.
