De re coquinaria was one of the earliest cookbooks written, in the first century AD. Its Roman authors noted that recipes should use a heavy mix of spices and herbs. Mix 1 teaspoon of Italian herb blend into a cup of tomato sauce to make flavorful sauce for veal or eggplant Parmesan, or spaghetti. Doctor up store-bought pizza by sprinkling these crushed herbs over the top before baking. Rub onto meat to season Italian-style roast chicken or fish.
