We use the sweetest cracked cassia bark, lots of sweet cloves and allspice berries along with hand-broken star anise to add a warm sweetness to our pickling spice mix, while pepper, mustard seeds, dill seeds, and juniper add a savory tang. Use 2 teaspoons per quart jar for pickles or use this spice blend for other vegetables like onions, beets, green beans, or even pickled eggs. Ingredients: Mustard, dill, bay leaf, ginger, allspice, pepper, cloves, star anise, coriander, cinnamon, juniper, mace, chiles, cardamom.

From a devotee of spice house pickling spices

Every march I use pickling spices from spice house as part of a brine used to turn beef brisket into corned beef. In the late summer these pickling spices are used in a brine which change small cucumbers into pickles. These pickling spices are the highest quality I’ve encountered - perfectly balanced and of the highest quality components - I love these pickling spices and they love me back!

getting ready for cucumber season...

Anticipating gardening a little early and getting into fresh ferments this year. Looking into some fermented cukes and this pickling blend looked like a winner. May have to practice on some grocery store ones first!
