Preserved Lemons

A Moroccan delicacy, and an essential ingredient in Middle Eastern kitchens, preserved lemons, or 'lemon pickle,' can be found in recipes in English, American, and Indian cookbooks as well. These lemons were traditionally preserved in salt, water, and spices for transport over long distances and use in months when fresh lemons weren't available.

Details

Preserved or pickled lemons are cured in a brine of salt water and lemon juice. They are mildly tart and intensely lemony, with a salty tang that can be removed by blanching before use. Use preserved lemons in Moroccan and Tunisian food, in soups and rice dishes, or to make sauces and vinaigrettes. Puree pieces of lemon with chickpeas, tahini and garlic for delicious lemon hummus. These preserved lemons are hand-made by Les Moulins Mahjoub, on the Mahjoub Family Estate in Tunisia.Certified organic by ECOCERT.

Amazing ingredient

We bought these for a Lemon Tea Cake recipe, and have also made our own as slices. They are amazing and really add a special something to everything they touch.

Not a fan

I didn’t expect them to be so mushy, and I didn’t expect the jar to include hot chilies, which affects the flavor. Out of many purchases, my only disappointment from Spice House

Amazing Taste!

These are a necessary and perfect addition to any middle eastern dish. A little goes a long way and elevates any dish calling for a tangy sour hint. We add to yogurt and use with harissa. Especially good with lamb and chicken!

Inedible

I’ve never had these before but something was not right about the flavor of these. I would liken the flavor to pine-sol. Had to discard. Next time I will make my own.
