Grilled Vegetable Sandwich with Sandwich Hero

Bought too much at the Farmer’s Market? You grew more veggies than you can ever eat? We feel you! Take your garden goodies from ho-hum to HUZZAH with Sandwich Hero.

We love this sandwich, smoky and charred from the grill, but this recipe is flexible and can be made in the oven or stovetop in a heavy pan.

Yield: 4 sandwiches

Sandwich Hero


Jar, 1/2 Cup, 1.8 oz


  • 2 medium zucchini, sliced thinly lengthwise
  • 1 medium eggplant, sliced thinly
  • 1 red bell pepper, sliced into thin rings
  • 1 red onion, sliced into thin rings
  • 2 medium tomatoes, sliced thinly
  • 1/4 cup extra virgin olive oil
  • 3 tbsp Sandwich Hero
  • 4 large crusty rolls, split
  • 4 tbsp pesto, homemade or purchased
  • A handful of fresh basil leaves
  • 2 cups shredded soft lettuce
  • Drizzle of balsamic
  • Optional add-ins: thinly sliced provolone cheese, canned tuna, drained, flaked and drizzled with lemon juice

Preparation Instructions:

Preheat grill to medium or oven to 375F. Line a sheet pan with parchment if using oven.

Place zucchini, eggplant, peppers, onion and tomatoes in a large mixing bowl. Toss veggies with EVOO and Sandwich Hero. Arrange veggies on heated grill or lined sheet pan.

Cook on one side until browned and lightly charred. Turn and cook the other side. Remove from grill.

Schmear each roll with 1 tablespoon pesto. Pile veggies on rolls, add lettuce and basil leaves. Drizzle with balsamic and a sprinkle of Sandwich Hero.
