Chai Spice Granola
The great thing about granola is that you can sub out so many ingredients to your preference. Simply follow the same recipe guidelines and include your favorite nuts, cereal grains, and spices. Let us know in the comments if you come up with a deliciously unique creation.

Preparation Instructions:

Preheat oven to 350°F and spray a 9x12 glass pan with oil. Combine the oats, nuts, seeds, salt and Chai Spices in a large bowl. Add in the oil, maple syrup and vanilla, and mix well until everything is thoroughly coated. Pour the granola into your prepared pan and spread it into an even layer. Bake for 20-25 minutes until lightly golden, stirring halfway through the baking process. The granola will further crisp up as it cools. Allow 45 minutes for the granola to cool. Top with the dried fruit (and chocolate chips, if using). Break the granola into pieces to your desired chunkiness.

Feel free to sub out the Chai Spices for Apple Pie or your favorite cinnamon. If you want toasted coconut in the granola, stir the flakes in halfway through the baking process. Granola will keep in an airtight container at room temp for up to 2 weeks, and up to 3 months in the freezer.

I sub in various puffed cereals—millet, corn, rice etc. for the oatmeal for a lighter granola. I also use whatever nuts I have on hand as walnuts, pecans, pepitas, and pistachios work well too. Chai sounds like a good spice but I often use cinnamon, cardamom, nutmeg etc. And finally, heating up the oils, sweetners, and spices before mixing it in to the rest and baking makes is easier to combine the ingredients.
