In a large pot, whisk together the vegetable stock, coconut milk, pumpkin puree, and spice packet.
Bring mixture to a boil. Lower heat to medium, then add orange juice, ginger, soy sauce, and Kosher salt.
Simmer for 25-30 minutes, remove from heat, and stir in honey. Add salt or Sriracha to taste.
For a heartier soup add cooked shrimp, firm tofu, rice noodles, or vegetables. Finish with fresh cilantro or a dollop of creme fraiche.
