Spice House Sling

Spiced gin sling with Bénédictine, Cherry Heering, pomegranate molasses and pineapple-orange juice. Includes punch tips and easy swaps.

Spice House Sling
A kind gentleman representing the fine spiced liqueur, Bénédictine, stopped by our Old Town shop one day. He was looking to procure a wide variety of herbs and spices, each representing prime flavor notes in Bénédictine's closely guarded secret recipe. Using these spices, he would create an aroma kit, like those used by wine tasters, to demonstrate his liqueur's depth to costumers. He gifted us a bottle of Bénédictine and this drink was soon crafted after!

  • A bright, layered cocktail blending gin, Bénédictine, Cherry Heering and a pineapple-orange juice base with pomegranate molasses for depth.
  • Shake the syrupy base well so the molasses and sugar combine, then shake the cocktail vigorously to chill and emulsify the juices.
  • For larger gatherings, use the punch variation, pre-mix the base, and add club soda only when serving.

Ingredients

  • 4 parts gin
  • 3 parts Bénédictine
  • 2 parts Cherry Heering
  • 1 part pomegranate molasses
  • 1 part sugar
  • 7 parts pineapple-orange juice
  • 1 part fresh squeezed lime juice
  • 1 dash orange bitters

Preparation Instructions:

To mix, stir pomegranate molasses and sugar at the bottom of a cocktail shaker until well combined. Stir in lime juice and add ice to fill the shaker.

Add gin, Bénédictine, Cherry Heering, and pineapple-orange juice. Shake vigorously for one minute. Add a dash of bitters and gently shake a few times to roughly combine.

Strain into tall glasses with lime wedge to garnish. Cut with club soda to serve a crowd.

Frequently Asked Questions

What is a Spice House Sling?

It is a tall, fruity gin cocktail that layers herbaceous Bénédictine and Cherry Heering over a pineapple-orange juice base, brightened with lime and pomegranate molasses for sweet-tart depth.

How do I convert parts into ounces for one serving?

A simple conversion is 1 part = 1/2 ounce. Using that: 2 oz gin, 1.5 oz Bénédictine, 1 oz Cherry Heering, 0.5 oz pomegranate molasses, 0.5 oz sugar or simple syrup, 3.5 oz pineapple-orange juice, 0.5 oz lime juice, plus a dash of orange bitters.

Can I substitute Bénédictine or Cherry Heering?

Bénédictine is a unique herbal liqueur so there is no exact match. If needed, try a milder herbal liqueur or amaro and reduce sweetness. For Cherry Heering, Luxardo maraschino or another cherry liqueur works well; adjust sweetness to taste.

What if I don't have pomegranate molasses?

Use grenadine or pomegranate syrup as a quick substitute, but reduce the amount if it is very sweet. You can also simmer pomegranate juice until slightly reduced to concentrate flavor.

Why does the recipe ask to stir molasses and sugar first?

Pomegranate molasses is thick. Mixing it with sugar or using simple syrup helps it incorporate evenly into the drink so the sweetness and tartness distribute properly.

How should I make the punch variation for a crowd?

Follow the hinted ratios: increase to 5 parts gin, 4 parts Bénédictine, 4 parts Cherry Heering and keep the other flavors. Stir the molasses and sugar in the pitcher, add the spirits and juices, chill, then add club soda when serving.

Can I make this ahead and how long will it keep?

You can pre-mix everything except the club soda and ice. Store chilled up to 24 hours to keep the citrus bright. Add soda and ice just before serving.

How should I serve and garnish the Spice House Sling?

Strain into tall glasses over ice, garnish with a lime wedge. For a festive touch add a pineapple slice or a maraschino cherry. Top with club soda if you want a lighter, fizzy finish.
