For half a century, Vietnamese cinnamon was extremely hard to find in the United States. We grind Vietnamese Cinnamon bark in house. It produces a dark, rich cinnamon with quite a bit of spiciness. This cracked version is best for steeping mulled cider or wine. Ingredients: Cassia cinnamon.

Takes about a 1/4 tsp in the filter of a drip coffee maker before adding the grounds, no more crushing sticks!
When we brew coffee, we put a half teaspoon of the cracked cinnamon in the filter with the coffee. Yum yum.
My husband is diabetic. We heard that cinnamon is good for him. I tried putting powdered cinnamon in his coffee every morning but that made a film on the top of the beverage. A very kind and knowledgeable Spice House Associate suggested using the cracked cinnamon instead. That was the perfect solution to our problem and he enjoys the taste of the coffee this way.
