This chile, literally translated as “yellow chile”, is a key ingredient for Peruvian classics like ceviche, or for inspiring any spicy cuisine. Peruvian Aji Amarillo powder is an important ingredient in the Peruvian stew Aji de Gallina and in Huancaina sauce. We also love it for pineapple or other fruit salsas, and to heat up cheese sauce or scrambled eggs.
