Crystallized--or candied--ginger is created by cooking young slices of ginger root in cane sugar syrup. It has been enjoyed as a candy since the days of Marco Polo. Crystallized ginger not only has a tasty contrast of sweet and sharp flavors, it also helps the digestive process. In the seventeenth century Englishmen would have a few pieces of ginger after dinner to settle their stomachs and freshen their breath. Ingredients: Ginger, sugar, sulfites.

Tender, sharp, and not too sweet

I find many ways to use crystallized ginger, from enjoying a nibble as a sweet treat to adding it to baked goods for an unexpected flavor burst. The Spice House crystallized ginger slices are tender, not tough and dry. They pack a vibrant and sharp flavor. I was most pleased by the fact that the sugar coating used in the preserving process is not overdone. I have purchased other brands of crystallized ginger that were so heavily coated in sugar they were unpleasant to chew. But, not the ginger slices from The Spice House. This past week, our Asian pears were ready for harvest. I snipped up three slices of crystallized ginger and tossed it with pear slices and thawed frozen raspberries. This was the base for a wonderful baked crisp dessert. Thank you for such a quality product. I am looking forward to using it in our molasses ginger cookies during the holidays. But, I am sure I will need to buy more for then because these slices are so good, they won't last that long in the cupboard!
