
Port-braised Short Ribs with Ginger and Star Anise
Crystallized--or candied--ginger is created by cooking young slices of ginger root in cane sugar syrup. It has been enjoyed as a candy since the days of Marco Polo. Crystallized ginger not only has a tasty contrast of sweet and sharp flavors, it also helps the digestive process. In the seventeenth century Englishmen would have a few pieces of ginger after dinner to settle their stomachs and freshen their breath. Ingredients: Ginger, sugar, sulfites.
We have tried a variety of crystallized ginger slices. Even though these are more expensive than most ginger slices, they are definitely the best flavor and do an effective job of settling upset stomachs.

Keep several packages in storage for a 3-4 x per week nibble of one slice. Along with my daughter’s home made licorice, these are my very favorites—along with chocolate!
